Emril Lagasse- Brisket

Ingredients there are no measurements written in the recipe 

  • Brisket
  • Garlic
  • 1 qt beef broth
  • Spices: salt, pepper, garlic powder
  • Chili sauce
  • Brown sugar
  • Onions

Steps

  1. Preheat oven to 500. Trim brisket- make slits (fat on top) and insert sliced garlic. Season with salt and pepper. Put in hot oven (cover), brown, curn over and brown.
  2. Reduce heat to 350 bake one hour
  3. IDK what this says?? Saute and caramelize onions with olive oil and salt and pepper
  4. Take quart of beef broth- put brown sugar, take out of oven and add sugar to gravy. Mix well, add ketchup and chili sauce to top of meat plus onions and garlic powder.
  5. Put cooked onions on top and cover again with foil. bake 350 for 2 more hours.
  6. When done, take out of gravy and strain gravy. Slice meat and add gravy.

Ingredients

  • 1 pkg orange, green, red jello
  • 1.5 cup boiling water or 4 little packs w 1.5 cup water each
  • 1/2 pt sweet cream (or half and half)
  • 1/2 cup sugar
  • 1 pkg knox gelatine in 1/2 cup cold water
  • vanilla
  • 1/2 pt sour cream

Steps

  1. Heat sweet cream and sugar until almost boiling. Add gelantine into cold water- add this to cream. Add in vanilla and sour cream.

Ingredients

  • 2 cans 12oz apricot nectar
  • ½ cup water
  • 6 oz orange jello
  • ¼ cup water
  • 1/3 tsp salt
  • ½ tsp pumpkin spice
  • 1 pkg dream whip

Steps

  1. Mix water and nectar. Sprinkle in orange jello, put in pan.
  2. Add sugar, salt, and pumpkin spice, then heat.
  3. Fold in 1 pkg dream whip when jello is thick

Veal Marsala

Veal Marsala

Ingredients

  • 5 lb thinly sliced veal- salt and peppered
  • 2 tbl flour
  • 6 tbl margarine
  • 1 clove garlic peeled
  • ½ sliced mushrooms
  • ½ marsala wine
  • ½ cup beef bouillon

 

Steps

  1. Pound veal. Season. Dip in flour and brown a few at a time with ¼ c margarine with garlic clove. Discard garlic and remove meat.
  2. Add wine and bouillon- dissolve in brown bits
  3. Return veal to pan, cook one minute. Serve.

Ingredients

  • 5- 6 lb roast
  • 1/8 cup flour
  • 2 eggs
  • ½ cup water
  • ½ cup milk
  • ½ tsp salt

Steps

  1. Roast meat at 500 for ½ hour. Preheat oven, turn oven off. 2 hours uncovered.
  2. Beat above until fluffy. 1 hour before roast is done. Then baste again.
  3. Put roast in another pan. Covered.
  4. Take drippings and put into 9 x 9 pan and heat until hot (450)
  5. Put flour milk in- bake for 20 minutes at 450. Reduce heat to 350 for 15 minutes.
