Emril Lagasse- Brisket

Ingredients there are no measurements written in the recipe 

  • Brisket
  • Garlic
  • 1 qt beef broth
  • Spices: salt, pepper, garlic powder
  • Chili sauce
  • Brown sugar
  • Onions

Steps

  1. Preheat oven to 500. Trim brisket- make slits (fat on top) and insert sliced garlic. Season with salt and pepper. Put in hot oven (cover), brown, curn over and brown.
  2. Reduce heat to 350 bake one hour
  3. IDK what this says?? Saute and caramelize onions with olive oil and salt and pepper
  4. Take quart of beef broth- put brown sugar, take out of oven and add sugar to gravy. Mix well, add ketchup and chili sauce to top of meat plus onions and garlic powder.
  5. Put cooked onions on top and cover again with foil. bake 350 for 2 more hours.
  6. When done, take out of gravy and strain gravy. Slice meat and add gravy.

Veal Marsala

Veal Marsala

Ingredients

  • 5 lb thinly sliced veal- salt and peppered
  • 2 tbl flour
  • 6 tbl margarine
  • 1 clove garlic peeled
  • ½ sliced mushrooms
  • ½ marsala wine
  • ½ cup beef bouillon

 

Steps

  1. Pound veal. Season. Dip in flour and brown a few at a time with ¼ c margarine with garlic clove. Discard garlic and remove meat.
  2. Add wine and bouillon- dissolve in brown bits
  3. Return veal to pan, cook one minute. Serve.

Ingredients

  • 5- 6 lb roast
  • 1/8 cup flour
  • 2 eggs
  • ½ cup water
  • ½ cup milk
  • ½ tsp salt

Steps

  1. Roast meat at 500 for ½ hour. Preheat oven, turn oven off. 2 hours uncovered.
  2. Beat above until fluffy. 1 hour before roast is done. Then baste again.
  3. Put roast in another pan. Covered.
  4. Take drippings and put into 9 x 9 pan and heat until hot (450)
  5. Put flour milk in- bake for 20 minutes at 450. Reduce heat to 350 for 15 minutes.

Barbecue Sauce for Ribs

Barbecue Sauce for Ribs

Ingredients

  • 1 cup ketchup
  • ¼ cup cider vinegar
  • 3 tbl brown sugar
  • 3 tbl Worcestershire sauce
  • 1 tsp liquid smoke
  • ½ tsp salt

Steps

  1. Boil 3 lb baby ribs 1 hour until done. Simmer.
  2. Mix sauce ingredients in pan, simmer uncovered, stirring until thick
  3. Heat broiler. Line broiler pan with foil. Place ribs, meat side down, 4 to 5 inches from broiler rack, brush with sauce 6 to 7 minutes
  4. Turn over, brush with sauce, broil until done and edges are slightly charred

Barbeque Spare Ribs

Barbeque Spare Ribs

Ingredients

  • 2 racks of spare ribs
  • 2 tbl sugar
  • ½ cup or m0re honey
  • ½ cup cider vinegar
  • 1/3 cup soy sauce
  • 1 cup beef broth
  • 2 cloves garlic- mashed
  • 1 tsp ginger

Steps

  1. Trim fat off of ribs- cut into individual pieces
  2. Mix together remaining ingredients. Marinate ribs in mixture all day. Baste and turn.
  3. Put on broiler rack and bake- 50 minutes at 350

Oriental Glazed Ribs

Oriental Glazed Ribs

Ingredients

  • 2 slabs of ribs
  • 2 tbl hoisin sauce
  • 2 tbl soy sauce
  • 1 tsp sugar
  • 1 tsp salt
  • 1 clove garlic- minced
  • Plus fruit sauce glaze
  • ½ cup Chinese hot mustard
  • 1/3 cup apricot
  • 1/3 cup peach preserve- plus orange juice to make desired consistency

 

Steps

  1. Preheat oven to 425, slice between stick ends of rib bones- 1”
  2. Mix hoisin sauce plus seasoning on both sides
  3. Put ribs in large roasting pan. Bake for 20 minutes or longer until no pink shows and drain off fat
  4. Then brush with fruit glaze sauce and broil a few minutes until sauce melts and forms glaze

Ingredients

  • 5- 3 inch sirloin steak
  • ½ tsp salt
  • ¼ tsp ground pepper
  • 1-2 cloves garlic
  • 1 cup ketchup
  • 2 tsp Worcestershire sauce
  • 1 tbl lemon juice
  • 1/3 cup melted margarine
  • Sliced onion for the top

 

Steps

  1. Bake at 350 for 1 hour to 1.5 hours uncovered
