Southern Pecan Pie

Ingredients

  • 9″ unbaked pie shell
  • 1 cup pecan halves
  • 3 eggs
  • 1 tblspn melted butter
  • 1 cup light corn syrup
  • 1/2 teasp vanilla
  • 1 cup sugar
  • 1 tblspn flour

Steps

  1. Arrange pecan halves in bottom of pie shell
  2. Beat eggs, add butter, corn syrup, vanilla
  3. Stir until well blended
  4. Combine sugar and flour and blend this with the egg mixture
  5. Pour over nuts in pie shell
  6. Let stand until nuts rise to the surface
  7. Baking is 350 oven for 45 minutes
  8. The nuts will glaze during baking. Six servings.

Chocolate Cream Pie

Ingredients

  • 1 envelope gelatin
  • 1/4 cup cold water
  • 1 cup milk
  • 6 level tblspn cocoa or squares melted chocolate
  • 1/2 cup sugar
  • 1/2 teasp salt
  • 1 teasp vanilla
  • 1 cup cream

Steps

  1. Soften gelatin in cold water. Let stand. Scald (don’t boil).
  2. Combine milk and chocolate, sugar, salt
  3. Add scalded milk gradually
  4. Stir in gelatin until dissolved. Let cool.
  5. Add vanilla to cream and whip.
  6. When mixture begins to thicken. Fold in whipped cream. Fill pie shell. Chill.
  7. Spread the top with whipped cream

Shirley Averbach Key Lime Pie

Shirley Averbach Key Lime Pie

This is cool- she rewrote the this recipe because the first one was so used. 

Ingredients

  • 4 eggs- separated (yolks, whites)
  • 1 can sweet condensed milk
  • 1/2 cup lime juice- plus some rind

Steps

  1. Mix egg yolks, sweet condensed milk, and lime juice- add lime juice to milk
  2. Add mixture to pre-baked pie crust for 12 to 15 minutes. Bake at 350 degrees
  3. Beat whites- add sugar (1/2 to 1/4 cups)
  4. Cool pie. Add meringue on top of pie.

Easy Chocolate Pie

Ingredients

  • Graham cracker crust or reg pie crust
  • 3 oz cream cheese- softened
  • 1/4 cup brown sugar
  • 4 oz melted semi-sweetened chocolate
  • 1/3 cup milk
  • 1 teasp vanilla
  • 3 1/2 cups whipped topping and chocolate curls
    • Try to use real whipped cream

Steps

  1. Mix cream cheese with brown sugar
  2. Add melted semi-sweet chocolate, milk, vanilla- beat until smooth
  3. Fold in whipped topping and chocolate curls

Ingredients

Filling

  • 4 oz unsweetened chocolate
  • 1 cup pecan halves
  • 3 large eggs- beat lightly
  • 1/2 cup sweet butter- melted and cooled
  • 3.4 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup corn syrup
  • 1 tblspn bourbon
  • 1 teasp vanilla
  • 1/2 teasp salt

Pie filling

  • 1 1/4 cup flour
  • 3/4 salted butter
  • 2 tblspn crisco
  • 1/4 teasp salt

Steps

Pie crust

  1. Blend flour and shortening and salt (meal)
  2. Add 3 tblspn ice watter
  3. Toss into a ball- knead lightly. Dust with flour and refridgerate 1 hour
  4. Then roll into 1/8″- fit into pan and chill 30 minutes

Filling

  1. Melt chocolate and cool
  2. Scatter pecans on shell
  3. Beat eggs and other ingredients pour into shell
  4. Preheat 375 degrees on lower oven rack- 1 hour or until set
  5. If rim is brown- cover with foil
