Tomato Soup

Ingredients

  • 8 to 10 tomatoes
  • 3 stalks celery
  • 1 clove garlic
  • 1 sliced onions
  • 3 cloves
  • 1 bay lead
  • Sugar and salt to taste
  • 2 cups water
  • 2 tbl flour

Steps

  1. Simmer for 20 minites and strain
  2. Then add 1/8 lb butter and 2 tbl flour

Gazpacho Soup

Gazpacho Soup

Ingredients

  • 1 clove garlic
  • 2 tbl vegetable oil
  • 3 tomatoes
  • 1 green pepper
  • 4 stalks celery
  • 1 cucumber peeled and sliced
  • 2 sweet onions
  • 2 tsp Worcestershire sauce
  • Handful fresh parsley
  • 1/2 cup red wine vinegar
  • 1 tsp group kosher salt
  • 1 tsp pepper
  • Large bottle of tomato juice

Steps

  1. Crush garlic in oil in a large container
  2. Chop all vegetables. Put in a pot and add liquids
  3. Keep in refrigerator 1 day before serving. Can keep in fridge 3-4 weeks

Carrot Soup

Carrot Soup

Ingredients

  • 1 lb carrots- peeled and chopped
  • 6 cups veg or chicken stock
  • Course salt and pepper to taste
  • 1 tbl ginger paste
  • 1/2 tsp tumeric
  • 1/2 tsp grated coriander
  • Garnish with slices scallions

Steps

  1. Cook all above except scallions about 1/2 hour. Then blend- cool and blend- serve hot with scallions.

Onion Soup

Onion Soup

Ingredients

  • 3 onions
  • 1/4 cup butter
  • 1/2 tsp brown sugar
  • 6 cups water
  • 8 slices french bread
  • 2 tbl dry white wine
  • Salt and pepper
  • 1/2 cup grated gruyere or swiss cheese

Steps

  1. Peel and slice onions, melt half of the butter and cook til transparent
  2. Sprinkle onions with flour- cook, stirring until flour covers
  3. Add sugar, then graduately stir in water. Simmer for 20 minutes.
  4. Preheat oven to 450
  5. Fry bread in remaining butter. Place bread in bottom of bowl or in oven-proof soup tureen. Add wine. Pour soup on bread
  6. Sprinkle with cheese. Bake 5-10 minutes.

French Onion Soup

French Onion Soup

Ingredients

  • 1/4 cups butter
  • 4 cups thinly sliced onion
  • 4 can (10 1/2 oz size) beef bouillon, undiluted
  • 1 tsp salt
  • 4 to 6 slices of thick french bread
  • 2 tsp grated parmesan cheese

Steps

  1. Heat butter in large skillet, add onion and saute until golden- 8 minutes
  2. Combine onion, bouillon, and salt in medium saucepan, bring to boiling
  3. Reduce heat and simmer, covered, 30 minutes
  4. Toast french bread in broiler until brown on both sides sprinkle with cheese
  5. Broil until cheese is bubbly
  6. Float on top of the soup
