Lemon Pie

Ingredients

  • 1 cup white sugar
  • 2 tblpsn lour
  • 3 tblpsn cornstarch
  • 1/4 teasp salt
  • 1 1/2 cups water
  • 2 lemons juiced and zesters
  • 2 tblpsn butter
  • 4 egg yolks, beater
  • 1 (9″) pie crust, baked
  • 4 eggs whites
  • 6 tblpsn white sugar

Steps

  1. In medium saucepan whisk 1 cup sugar, flour, cornstarch, and salt
  2. Stir in water, lemon juice, and lemon zest
  3. Cook over med-high heat, stirring frequently until mixture comes to a boil
  4. Stir in butter
  5. Place yolks in a bowl and gradually whisk in 1/2 cups sugar mix
  6. Whisk egg yolk mixture back into remaining mixture
  7. Bring to a boil
  8. Cook while stirring until thick
  9. Remove from heat
  10. Pour into pie crust and bake 10 minutes at 350
