Lemon Pie #3

Ingredients

  • 3 egg yolks beaten
  • 1 cup warm water
  • 7/8 cup sugar
  • 3 tblspn cornstarch
  • 1/4 cup cold water
  • 1/8 teasp salt
  • 1/4 cup lemon juice
  • 1 tblspn butter
  • 3 egg whites
  • 1/4 teasp cream of tartar
  • 3 tblspn sugar

Steps

  1. Add warm water to beaten egg yolks.
  2. Add 7/8 cup sugar, cornstarch which has been mixed with 1/4 cup cold water
  3. Cook over double boiler
  4. Add 1/8 teasp salt, 1/4 cup lemon juice, and some lemon rind- stir until thick
  5. Add 1 tblspn butter
  6. Take the 3 egg whites at room temp
  7. Add 3 tblspn sugar, 1/4 teasp cream of tartar
  8. Beat until stiff, put in 425 ober
  9. (WATCH IT: this is for an 8″ pie, not 10″)
