Ingredients
- 3 egg yolks beaten
- 1 cup warm water
- 7/8 cup sugar
- 3 tblspn cornstarch
- 1/4 cup cold water
- 1/8 teasp salt
- 1/4 cup lemon juice
- 1 tblspn butter
- 3 egg whites
- 1/4 teasp cream of tartar
- 3 tblspn sugar
Steps
- Add warm water to beaten egg yolks.
- Add 7/8 cup sugar, cornstarch which has been mixed with 1/4 cup cold water
- Cook over double boiler
- Add 1/8 teasp salt, 1/4 cup lemon juice, and some lemon rind- stir until thick
- Add 1 tblspn butter
- Take the 3 egg whites at room temp
- Add 3 tblspn sugar, 1/4 teasp cream of tartar
- Beat until stiff, put in 425 ober
