Shrimp and Macaroni

Ingredients

  • 4 oz 1 to 1 cup elbow macaroni
  • 1 cup cooked fresh or canned shrimp
  • 3 hard boiled eggs, diced
  • 1 cup grated cheddar cheese
  • Paprika
  • 2 tbl butter or margarine
  • 2 tbl flour
  • 5 tsp salt, dash pepper
  • 2 cups milk or 1 cup evaporated milk and 1 cup water

Steps

  1. Cook macaroni until tender in salted water. Drain.
  2. In greased 2 quart casserole alternate one layer macaroni, shrimp, and diced eggs
  3. Sprinkle cheese on top, then sprinkle lightly with paprika. Top with a few large shrimp.
  4. Meanwhile melt butter in saucepan over low heat. Stir in flour, salt, and pepper. Gradually blend in milk.
  5. Cook over med heat stirring until thick and smooth. Pour over ingredients in casserole dish.
  6. Bake uncovered in preheated 400 degree oven for 30 minutes. 6 servings.
