Ingredients
- 4 oz 1 to 1 cup elbow macaroni
- 1 cup cooked fresh or canned shrimp
- 3 hard boiled eggs, diced
- 1 cup grated cheddar cheese
- Paprika
- 2 tbl butter or margarine
- 2 tbl flour
- 5 tsp salt, dash pepper
- 2 cups milk or 1 cup evaporated milk and 1 cup water
Steps
- Cook macaroni until tender in salted water. Drain.
- In greased 2 quart casserole alternate one layer macaroni, shrimp, and diced eggs
- Sprinkle cheese on top, then sprinkle lightly with paprika. Top with a few large shrimp.
- Meanwhile melt butter in saucepan over low heat. Stir in flour, salt, and pepper. Gradually blend in milk.
- Cook over med heat stirring until thick and smooth. Pour over ingredients in casserole dish.
- Bake uncovered in preheated 400 degree oven for 30 minutes. 6 servings.
